How to Make Pumpkin Cupcakes

Ingredients

  • 1 ½ cups all-purpose flour

  • 1 cup granulated sugar

  • 1 cup pumpkin puree
  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
  3. In another large bowl, blend sugar and vegetable oil until combined. Add pumpkin puree, eggs, and vanilla; mix well.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Fill each cupcake liner about 2/3 full with batter.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow cupcakes to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
